原料: 虾仁250克,嫩豌豆100克,鸡汤25毫升,料酒10克,精盐1克,味精1.5克,湿淀粉5克,豆油750克(实耗50克),芝麻油10克.
制作方法::
1、将嫩豌豆洗净,放入开水锅中,用淡盐水焯一下,待用;
2、炒锅中火烧热,加入豆油,待三成热时,将虾仁入锅,快速用筷子划散,炸约10秒钟,倒入漏勺,控油(炸时要掌握热锅,冷油,快速,则不粘锅);
3、炒锅内留25克底油,烧热,放入豌豆,翻炒几下,再烹入料酒、鸡汤、盐、味精,随即放入虾仁,用湿淀粉勾薄芡,将炒锅颠翻几下,淋上芝麻油,出锅,入盘,即可
