清炒虾仁
1、去除虾仁背部及腹部的黑(白)线,取一只蛋的蛋清,加入黄酒、盐,可依个人口味再加入胡椒粉和味精等(觉得原味的很好吃,所以经常省了后两项)。做好后,放一旁备用,最好放置20分钟。下锅前沥水。
2、切葱花备用。
3、锅内下油,等油温七成时,下虾仁,翻炒几下一熟即可(因为原先已经调过味,所以不用再加调味品)。下葱花,一旦出香味即可起盆。
其中要注意油温,太高是仁易老且会出现蛋清的芙蓉。
